This recipe is called Lunch Time Chopped Salad in Don Colbert’s Let Food Be Your Medicine Cookbook.

You can use any combination of fresh vegetables that you have on hand. I’ll leave the recipe from the book below, but feel free to use what you have.
I lived mine up by mixing my own dressing with oil and lemon juice 🍋, salt, pepper, oregano, and my own combination of complete seasoning that I may never be able to duplicate. 🤦♀️.
I made this in the morning while cooking breakfast. It made for a delicious snack for lunch and as a side for dinner.

2 hearts of romaine, coarsest chopped
1 cucumber, chopped
1 large tomato, diced
1 small carrot, peeled and finely chopped
1 yellow bell pepper, seeded and chopped
4 pitted black olives, chopped
2 table spoons chopped fresh parsley
2 tablespoons extra-virgin oil
1 tablespoon balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
Roasted okra slices for garnish
Directions Place the hearts of romain, diced tomato, chopped cucumber, shallot, carrot, and pepper pieces, olive, and parsley in a mixing bowl.
Drizzle with oil and vinegar
Sprinkle with salt and pepper
Toss to evenly coat.
Cover and refrigerate for later use or serve immediately with a garnish of roasted okra slices.
