Cooking is a creative outlet for me and this soup with all its colorful ingredients and fragrant spices is always a pleasure to create. If you follow me on Instagram you see that half my posts are food related. That's because a healthy diet is the easiest way to healthy hair. I wanted to share this comfort dish with you because it is tasty, easy to make, and full of healthy vegetables.
Some of my best dishes are created on a whim with what I have on hand. This soup was no different. My ingredient list below consists of a few staple vegetables that I always have on hand along with some fresh snap peas that I got from a gardener client. The fresh peas were delicious and cooked quickly alongside the zucchini and squash. If you decide to substitute any vegetable just keep in mind how long it may take for them to get done. If you use a root vegetable like carrots or sweet potatoes I would cook them for several minutes before adding softer vegetables like squash. Keep reading to see how I prepared this soup.
1 cup Red onion
2 cloves fresh grated garlic
1 Red Bell pepper diced
1 cup shredded carrots
1 cup squash cut into 1 inch pieces
1 cup zucchini cut into 1 inch pieces
1 cup fresh snap peas
Pink Himalayan Sea Salt
Heat a Dutch oven over medium high heat. Heating seasonings first releases more flavor. Next add vegetables and sauté for about 5 minutes or until soft and translucent. Remember to start with heartier vegetables first if you chose a different selection. All my vegetables take about the same amount of time to cook so I add them all at once.
Add about 4 cups of broth. I use a chicken broth prepared from a jar of chicken base. Alternatively, you can use homemade vegetable or chicken broth or bouillon. Next simmer for 20-25 minutes and enjoy.
You can eat it by itself or serve on top of rice or quinoa. This soup stores well so it makes for a healthy food prep meal. Don't those vegetables look delish! Let me know how you plan to serve this soup.
